Slow Cooker White Chicken Chili - Cozy, Creamy, and Easy to Make

Ingredients
  

  • 1.5 to 2 pounds boneless, skinless chicken breasts (or thighs)
  • 2 cans (15 ounces each) great northern or cannellini beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (4 ounces) diced green chiles, mild or hot
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander (optional but recommended)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional for depth)
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 4 ounces cream cheese, softened and cubed (or 1/2 cup half-and-half for a lighter version)
  • 1/2 cup sour cream or plain Greek yogurt
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro (optional)
  • For serving: shredded cheese, sliced jalapeƱos, avocado, extra cilantro, tortilla chips, lime wedges
